Southern Cornbread Dressing

What's Thanksgiving without dressing?

Ingredients:
 
•    One pan of cornbread, cooled
•    1 tbs. butter
•    1 1/4 c. chopped onion
•    1 1/4 c. chopped celery
•    2 tbs. water
•    1 1/4 tsp. poultry seasoning
•    1 tsp. rubbed sage
•    1/4 tsp. salt
•    1/4 tsp. pepper
•    3 c. bread cubes
•    2 1/2 c. chicken broth
•    1/3 c. finely chopped parsley
•    1 egg
 
Preparation:
 
Melt butter in a skillet; sauté onion, celery, and water. Cover, reduce heat and cook 15 minutes. Remove from heat and stir in poultry seasoning and next three ingredients. Crumble cornbread and combine with onion mixture, bread cubes, and next three ingredients and stir well. Spoon into a two-quart casserole dish coated with cooking spray. Bake uncovered at 325 degrees for 35 minutes.
