Pumpkin Roll Cake

This easy and delicious treat makes a lovely dessert for brunch, tea, or any afternoon holiday gathering.
 
Cake Ingredients:
 
•    1 c. sugar
•    2/3 c. cooked pumpkin
•    3/4 c. flour
•    1/2 tsp. cinnamon
•    1 tsp. baking soda
•    1/2 c. powdered sugar
 
Cake Directions:
 
Combine all ingredients, except powdered sugar. Cover a 12x15 inch cookie sheet with waxed paper and pour cake mix on top. Bake in preheated 375 degree oven for 15 minutes, or until golden brown. Sprinkle 1/2 c. powdered sugar onto a clean dish towel. Flip cake onto towel. Remove wax paper and roll cake up in towel. Unroll cake when cool.
 
Filling Ingredients:
 
•    1 c. powdered sugar
•    1/2 tsp. vanilla
•    2 tbs. butter
•    8 oz. cream cheese
 
Filling Directions:
 
Mix ingredients together. Spread evenly onto unrolled cake. Reroll cake. Dust with powdered sugar. Serve chilled.
