Proscuitto-Wrapped Stuffed Dates

This appetizer gets rave reviews. The sweetness of the dates merges with the creaminess of the mascarpone cheese and the salty tang of the proscuitto for a perfect combination. Generally, three per person is plenty. These can be prepared ahead of time, but they're best served warm and gooey.
•    Unpitted Medjool dates
•    One tub mascarpone cheese
•    One package proscuitto
Pit the dates by cutting a small slit in the date and removing the pit. Taking a small spoon (a baby food spoon works well), stuff the dates with mascarpone cheese. Then cut the proscuitto slice into three strips lengthwise. Wrap the dates with proscuitto and place on a sheet pan.
These can be stored in the refrigerator until ready to heat and serve. Set the oven on broil and place the dates about 6 inches from the element. Broil until the proscuitto is crispy and the cheese is bubbly. Only about 3 to 5 minutes. Enjoy!
