Maple-Glazed Salmon

For this recipe, wild-caught King or Sockeye salmon is best. You can find hoisin sauce and five spice powder in the Asian food section at your local supermarket. You can also prepare the marinade ahead of time and then marinate the fish when you're ready to start cooking.
•    2 tbs. maple syrup
•    1.5 tbs. apple juice
•    1.5 tbs. lemon juice
•    2 tsp. hoisin sauce
•    1.5 tsp. grated peeled fresh ginger
•    1.5 tsp. country style dijon mustard
•    1/4 tsp. five spice powder
•    2 (6 oz.) salmon fillets
Combine the first 7 ingredients in a large ziplock bag. Add fillets to bag and seal. Marinate in rerigerator 15 minutes.
Preheat broiler. Remove fillets from bag, reserving the marinade. Place fillets, skin side down, on a broiler rack coated with cooking spray. Broil for 12 minutes or until the fish flakes easily with a fork, basting fillets ocassionally with the reserved marinade.
