Corn Pudding

This super-easy recipe brings new meaning to the phrase "comfort food." It's always a big hit.
 
Ingredients:
 
•    16 oz. can corn, drained
•    16 oz. creamed corn
•    8 oz. sour cream
•    1 box Jiffy Corn Muffin Mix
•    1/2 c. butter, melted
 
Combine all ingredients in a medium sized bowl and stir until blended. Pour into a greased 9x13 baking dish and bake for one hour at 375 degrees for one hour, or until center is set.
 
Variations:
 
•    Add a can of green chilis or jalapenos
•    Add diced ham
