Cinnamon Vanilla Pear Butter
This pear butter is so good, you’ll think you died and went to heaven. It takes 7 hours to cook, but it is so worth it! Stir it into oatmeal, spread it on a cracker and top it with bleu or goat cheese, or eat with a spoon. Makes a great gift, too!
• 6 pears, peeled and diced
• 1 vanilla bean
• 1/2 c. packed brown sugar (I’ve also made this with amber agave nectar)
• 3 tbs. sugar
• 1 tsp. cinnamon
Please diced pears in slow cooker and sprinkle with sugar. Slice vanilla bean in half, scrape the paste into the pear mixture and stir. Lay the vanilla bean halves across the pear mixture and cook on high for 4 hours, stirring after two hours.
Puree the pears. I use an immersion blender and puree them in the slow cooker. Sprinkle the cinnamon over the pureed pears and cook on high another 3 hours until the pears are browned and thickened. Refrigerate. Oh, and licking the spoon is encouraged.
