Blueberry and Quinoa Salad with Feta
This salad is cool and refreshing. Perfect salad for a warm summer day. Shh. Don't tell them it's healthy.
Ingredients:

• 1 cup Cooked quinoa
• ¾ cup Mint leaves
• 1/3 cup Olive oil
• 11/2 tbs. Lemon juice
• 1/8 tsp. Kosher salt
• ½ tsp. Black pepper
• 11/2 cups English cucumber, diced
• 11/4 cups Blueberries
• ¾ cup red onion, diced
• 2 oz. Feta cheese, crumbled
Preparation:
Cook quinoa according to package instructions. Note ½ cup uncooked, makes about 1 cup cooked. Place the mint, oil, lemon juice, salt and pepper in a blender or food processor and puree. Mix all remaining ingredients in a bowl and gently stir in dressing. Chill for about an hour.
